Culinary Labs

Culinary Computer Lab You'll have access to two separate computer labs within our culinary facilities, one with 40 individual work stations dedicated entirely to your techno/cyber needs, and the other with 20 work stations. You'll also have access to the other computer labs that serve the larger Johnson & Wales University community, including wireless access so you can stay connected or work where you want, when you want.

Img Meat Lab 2 DEN 170x150Meat Cutting Lab Our refrigerated meat lab is an authentic, specialized industry environment dedicated to the fine art of butchering. Using a range of specialty equipment you'll learn to cut meats of all kinds. From lamb, beef and chicken, to pork and veal, you'll learn the process of butchering for both wholesale and retail cuts.

Nutrition Lab Johnson & Wales University’s unique Bachelor of Science in Culinary Nutrition program is now offered at our Providence and Denver campuses. At the Denver Campus you’ll find top-of-the-line culinary nutrition lab facilities, where you’ll learn how food science, food technology, and nutrition intersect with the culinary arts. You'll find all the equipment you need to conduct a scientific method of analysis, as well as develop your own food products.

Pastry Lab and Bakeshops Each of the 3 dedicated Pastry Labs and Bakeshops in Denver boast 1,300 square feet of technologically-advanced equipment to teach you the latest techniques used in the industry. Our two dedicated pastry labs have top-of-the-line, rotating ovens with speed racks, as well as all of the latest specialty utensils to help you master the intricacies of pastry art. You'll also find sugar-pulling stations, sugar blowing equipment, marzipan modeling and airbrushing, and chocolate sculpturing, to name just a few.

Our Bake Shop is equally well-equipped, with top-of-the-line, four-deck ovens. Here you'll learn all about the art of bread baking. You'll also learn the European tradition of fine artisan breads, croissants and danish. Finally, you'll work with any kind of dough you can imagine, including laminated dough, lean dough, and more.

Our Store Room simulates those found in large commercial establishments. It's designed to maintain proper food temperature as supplies are transported from the loading dock to the interior chambers.

To sharpen your management skills, you'll gain hands-on experience with the entire food and product storage chain. This includes the process of vendor requisition to receiving, storage and maintaining temperature logs for over 1,000 different products.

Inside the main Store Room, you'll find walk-in coolers and freezers dedicated to various foods and supplies, ranging from poultry, beef and seafood coolers, to storage areas for produce, dried and canned goods, and even chocolate.

Finally, you'll learn the importance of, and how to abide by, HACCP (Hazard Analysis Critical Control Points) for receiving, storing and logging temperatures of all perishable foods.
