Associate Degree ProgramIn our two-year Baking & Pastry Arts associate degree program, you’ll be introduced to the techniques of producing artisan breads, classic pastry, pies, tart and petits fours, celebration cakes, confections and showpieces.
Throughout the program, you’ll develop professionalism and proficiency in preparation procedures, production methods and presentation techniques for pastry, baked goods and desserts, as well as cost control and food safety.
You’ll receive your own pastry tool kit, and study from two proprietary JWU pastry textbooks. You’ll also take general arts and sciences and related professional studies classes that provide the critical thinking skills necessary to career success; you will then apply these learned skills through a term of real work experience.
Bachelor of Science Degree ProgramSkip several grueling years of apprenticeship and accelerate your exposure to a broad range of experiences in the pastry world by entering our baking & pastry arts bachelor’s degree program at our Providence Campus.
You’ll use the most technologically-advanced baking technologies, equipment, utensils and techniques to create your own pastry show pieces — artisan breads and decorative bread showpieces; wedding cakes; chocolate and sugar amenity showpieces; confections and plated desserts — and accelerate the career path to becoming an executive pastry chef or pastry shop owner. During your junior and senior years, you’ll create a variety of 3-D showpieces as well as participate in either an advanced domestic or international internship, where you'll work alongside some of the most prestigious names in the business. Ultimately, you’ll receive a deeper practical education in baking and pastry production, along with leadership training and networking opportunities to realize your career goals.
When You Graduate Having been exposed to every skill, technique and technology in the industry, you’ll be positioned with connections to some of the world’s best hotels, clubs and resorts, high-volume production bakeries, independent bakeries, restaurants, contract bakeries and wholesale pastry shops.
