An audience of close to 100 turned out for a panel discussion on “Adapting to Regulatory and Social Change” at the International Hotel/Motel and Restaurant Show held in New York City in November 2007. Sponsored by JWU, the forum of hospitality and food service professionals explored crosscurrents around the role of legislation; the rights and responsibility of the food service industry; the knowledge and awareness of consumers; sustainability and the role of education within these issues.
