The Essentials of Food Safety

Organized Kitchen Is a Safe KitchenAt Johnson & Wales University’s College of Culinary Arts, we know that how you cook is as important as what you cook.

We developed our Gold Standard for Food Safety to seamlessly integrate safety procedures into our culinary curriculum and throughout our food service facilities. Now, thanks to a grant from the Centers for Disease Control & Prevention (CDC), we’re sharing our expertise with you.

Recipe for a Food-Safe Kitchen or Classroom
Whether you’re a food service professional, an educator or a home cook, a little practice is all it takes for proper food safety to become second nature.

We’ve developed these supplementary materials to help make food safety both accessible and intuitive.

1) Understand the Major Food Safety Risk Factors
Knowledge is key to making food-safe choices. First step: learning and understanding the major food risk factors.

2) Develop Good Habits to Prevent Foodborne Illness
Hand-washing and cleanliness are essential to food safety. Our “Gold Standard for Food Safety Guide” (2MB PDF) covers the prevention of foodborne illnesses, including

  • Proper hygiene
  • Proper cooking temperatures for meat, poultry and fish
  • Hot and cold holding temperatures
  • Keeping your workspace organized and sanitary
  • Proper refrigeration and storage

Organizing your space is equally crucial, whether you’re a home cook with a small kitchen or a food service professional overseeing a large kitchen with multiple stations. While the economies of scale may be different, the principles are the same.

The “Gold Standard Guide” (2MB PDF) explains how to best organize your workspace, food storage areas and refrigerator(s) to minimize the potential for bacterial growth and/or cross-contamination.

Food Safety for the Whole Family
Families Cook: Nutritious Recipes with a Side of Food Safety” (2MB PDF) and “Las Familias Cocinan: Recetas Nutritivas” (Spanish version, 3MB PDF) focus on fun, healthy food that you can make with the whole family. Each recipe includes food safety tips to start the habit early.
