Marc DeMarchena joined the Johnson & Wales University faculty in 1998, when he won the First-Year Teacher Award. He teaches classes in customer service, beer tasting and production, bartending, wine and distilled spirits and liqueurs, restaurant service styles, and coffee and espresso drinks. He spent the summer of 2004 in Germany, as advisor of the student study abroad program there that focused on wine. He is also a recipient of the College of Culinary Arts’ Most Valuable Player Award, the 2010 Beverage and Dining Services Service Award, the 2011 Vollrath Award, and the 2007 Beverage & Dining Services Service Award.

DeMarchena came to JWU from the Westchester Marriott, Tarrytown N.Y., where he was a banquet maitre d’. Prior to that, he worked as food & beverage director at the Pearl River (N.Y.) Hilton and for several Aramark properties. In addition to his classroom duties, he acts as a consultant through MADWORKS, providing event planning, restaurant consulting and excellence training.

DeMarchena holds both the Advanced Wine and the Professional Spirits Certificate from the Wine Spirits and Education Trust, and teaches the intermediate level classes to local professionals. He is also a member of the Society of Wine Educators and Federation of Dining Room Professionals.
