Chef Charles Armstrong joined the faculty of Johnson & Wales University in 1996, where he teaches classes in sugar and chocolate artistry, cake decorating, pastries, and plated desserts. He received the Pastry Department Achievement Award in 2001, the 1999 Most Valuable Player Award and he helped the JWU team win the Grand Salon Award at the International Hotel/Motel & Restaurant Show in 2002, 1999 and 1998.

Prior to coming to JWU Armstrong worked in the pastry shops of a series of prestigious hotels, including Loew’s Hotel in Monte Carlo, the Four Seasons Biltmore Hotel in Santa Barbara, Calif., and the Ritz-Carlton Hotel in Amelia Island, Fla.
