Roger Dwyer has been at Johnson & Wales University since 1993, where he teaches Dining Room Management, Wine Education and Service Training. He was the recipient of the 2003 Beverage & Dining Services Service Award.

Dwyer is an independent consultant for restaurants in the training waitstaff and making suggestions for profitability. He also develops wine lists for several area restaurants. He is a member of the Society of Wine Educators from which he has earned the designation of Certified Specialist of Wine. He also holds an Advanced Certification from the Wine & Spirits Education Trust.
