Chef Drue Brandenburg, The Miami Ice Man, joined the culinary faculty at Johnson & Wales University in 1992 after holding several executive chef positions and receiving an associate, bachelor’s and master’s degrees. He worked previously for Tara Hotels in four states as an executive chef and has also worked for Interstate Hotels in New England as an executive chef.

After receiving his bachelor’s of science degree from Oklahoma State University in hotel and restaurant administration, he obtained an associate degree in culinary arts from the Culinary Institute of America and a master’s degree from Florida International University in Hospitality Management.

Chef Brandenburg is certified as an Executive Chef, Approved Culinary Evaluator and Culinary Educator from the American Culinary Federation. A member of the National Ice Carving Association, he is also the owner and operator of an ice carving company called “Miami Ice Man,” which creates ice sculptures for many of the area’s hotels, resorts, and premier events.
