Chef Lou Serra teaches food safety and cost controls, as well as nutrition, American and Continental cuisine, and quantity food production. He is also well-versed in Portuguese culture and cuisine.

Serra was the recipient of the 2007 Foodservice Academics Service Award.

Prior to joining the JWU faculty, Serra spent nearly two decades as executive chef at several country clubs in Rhode Island.
