Chef Paul Bolinger joined the faculty of Johnson & Wales University in 2002, where he teaches Meat Cutting, Purchasing & Product Identification, and Traditional European Cuisine. He has coached the Intracollegiate Culinary Competition Team, and under his direction, the JWU Norfolk team won a gold medal.
Paul Bolinger, ’96, graduated from the culinary arts program at the JWU Norfolk campus and the FSM program at JWU's Charleston campus. He was the food and beverage director with Wyndham Garden Hotels in both San Diego, Calif., and Kansas City, Kan. His two-year tenure with Wyndham led to a position as executive chef/general manager of Di’Napoli Ristorante of Boulder, Colo. He later opened a second DiNapoli Ristorante in Lincoln, Neb. Bolinger then became the general manager for Noodles & Company in Denver, finally returning to JWU as an instructor at the Norfolk Campus. He relocated to Charlotte in the summer of 2004.
