Prior to coming to JWU, William Idell worked at Spoleto Gourmet in Corvallis, Oregon; La Boheme Café in Trenton, N.J.; Café Pasqual's in Santa Fe, New Mexico; and he was the on-call chef La Bonne Maison Caterers and Tables of Content Caterers in Boston, Mass.

Idell created an award-winning food education program while working as the Nutrition Director of the Marblehead Community Charter Public School in Massachusetts. He has presented nationally and internationally on childhood nutrition for a variety of organizations including the U.S. Department of Education, Massachusetts Department of Education, Boston University, Yours for Children, The John Stalker Institute and Field To Plate in Challans, France.

Idell was voted 2009 Most Valuable Player; he received the 2008 Nutrition Department Service Award.
