A Registered Dietitian, Suzanne Vieira joined the staff at Johnson & Wales University in 1990. As a founder of the Team Nutrition Training Institute, conducted in partnership with Kids First of Rhode Island, she has taught school foodservice personnel from around the country how to prepare school lunches that are lower in fat, sodium and cholesterol and higher in vegetables, fruits and grains. Prior to joining Johnson & Wales, Vieira was an outpatient dietitian at St. Anne's Hospital in Fall River, Mass., and conducted research at the New England Medical Center in Boston, Mass. She also consults with local restaurants and the Somerset, Mass. public school system. Vieira is a member of the American Culinary Federation, the American Dietetic Association, the American School Foodservice Association and the Research Chef Association. She is recipient of the 2000 Outstanding Service Award and 2012 Les Amis d’Escoffier Society Award.
