A specialist in wedding cakes, Chef David Ricci teaches classes in the art of designing wedding cakes as well as Introduction to Bread & Rolls at Johnson & Wales University. He also advises the Cake Decorating Club.

Prior to joining the faculty at Johnson & Wales, he owned and operated the Better Bake Shop in Providence for two decades, and he has made cakes for such celebrities as Bon Jovi, F. Lee Bailey, and Liberace. He studied with masters such as Nicholas Lodge, Kerri Vincent and Julie Bashor, owner and president of the House of Clarendon, and is a member of the Bread Bakers Guild.
