Chef Kenneth Wollenberg teaches classes in desserts and baking. An expert ice carver himself, he is also the advisor to the student Chipper’s Ice Carving Club. Wollenberg has received the 2004 Medal of the French Government at the New York Food Show, the Grand Salon Award, and grand prize in three Riches-SeaPak Recipe Contests. He is a member of the Latin American Association Aragala – Gastronomic Restaurant Association of the Americas. He has placed in several ice carving competitions, including Zender’s Snowfest Ice Carving Competition and American Culinary Federation contests. Prior to coming to JWU, Wollenberg taught at Wake Technical Community College in Raleigh, N.C. He has also worked as executive pastry chef at Bakastias Incorporated in Durham, N.C. and was executive chef at Nevada Lodge & Casino in Crystal Bay, Nev. During the summer seasons, he is the executive chef at the Hay Harbor Golf Club on Fishers Island, N.Y.
Wollenberg is a Certified Executive Pastry Chef (C.E.P.C.) by the American Culinary Federation.
