Raised in New Orleans, Dorothy Gilbert attended college at Green Mountain College in Vermont, where she received a bachelor’s degree in Liberal Arts. She returned home to attend graduate school at the University of New Orleans, where she received an M.F.A. in Drama and Communications.

Gilbert spent the next 15 years working in the front of the house, moving in and out of management. Eventually, she landed at Bayona, one of the city’s top restaurants. She was there for five years before moving onto another one of the city’s gems, Peristyle. It was at these two restaurants that she really honed her fine dining service skills.

In the summer of 2005, about six weeks before Katrina, Gilbert and her husband relocated to Charlotte, North Carolina. She spent a year managing Upstream before joining the faculty at Johnson & Wales University.

Gilbert holds the Hospitality Grand Master Certification, which is the Federation of Dining Room Professionals’ highest level certification. She is also a Certified Hospitality Educator, a Certified Specialist of Wine and a Certified Specialist of Spirits. She holds a Level 2 WSET Professional Certification in Spirits, and Level 3 WSET Advanced Certificate in Wine, as well as other high-level wine certifications.
