Bio

Chenin Nickel is an assistant professor of Culinary Nutrition. She earned her BS in Nutrition and Dietetics from Murray State University and her MS and PhD in Nutrition Science from University of Nevada at Reno. She is a Registered Dietitian and completed her dietetic internship from Marywood University.

Prior to JWU, Nickel was an assistant professor at University of Nevada at Reno. She has a broad, interdisciplinary nutrition background with experience working in clinical and community dietetic settings. In addition, she has research expertise in community dietetics, clinical dietetics, food science and sensory science. She has published several peer-reviewed papers in these areas.

Nickel is passionate about training future dietitians and nutritional professionals to prepare them for their dietetic internship, graduate program or the workforce. Her goals are to inspire, challenge and engage the students by using relevant nutrition resources to foster critical thinking, both in and out of the classroom.

In her free time, Nickel enjoys cooking, hiking and yoga. She loves exploring Colorado and all of the recreational opportunities it has to offer.
