Bio

Chef La Castra joined the Johnson & Wales University in 1997.

Prior to joining JWU, his wide-ranging career included stints as personal chef for Burt Reynolds and Wang Laboratories founder Dr. An Wang.

He taught overseas programs for Carnival, Royal Caribbean, Celebrity and Norwegian cruise lines. He also ran training sessions in the Bahamas, Jamaica, the Dominican Republic, Singapore and Thailand.

He is a member of the Cookery and Food Association, and is certified by the National Restaurant Association as a Food Service Management Professional (FMP).
