Since joining the faculty of Johnson & Wales University in 1984, Susan Marshall has been instrumental in the development of both culinary arts and culinary nutrition bachelor's degree programs. Specializing in restaurant and human resources management, she draws on her extensive experience in standardizing operating procedures, performing cost analysis, and improving customer service and employee morale.

Marshall is a past recipient of the Robert M. Nograd Teacher of the Year Award, given to the faculty member who has made a deep impact on the education of future foodservice professionals, and she co-authored the JWU textbook “The Menu and the Cycle of Cost Control,” (Kendall Hunt). She was the 2008 recipient of the Foodservice Academics Service Award and won the Distinguished Scholarship Award in 2011.

Prior to coming to JWU, Marshall was involved with several successful management and consulting teams, including the Brick Alley Pub and Restaurant of Newport, RI.
