  • My Tulane Internship: From the Kitchen to the Clinic

    “I can honestly say my experience at Tulane was life-changing,” says Denver culinary nutrition major Nathalie.

    Nathalie’s work at Tulane University’s Goldring Center for Culinary Medicine focused on strategies to improve residents’ overall nutrition, eating habits and access to healthy food.

    It also advanced her career. In her own words:

    Since my Tulane internship, I’ve worked for

    • Share Our Strength, a nonprofit dedicated to ending childhood hunger
    • Denver Public Schools’ Farm Initiative

    In January, I will start a new position as a nutrition research assistant at the Colorado Children’s Hospital.

    My teaching and research experience at Tulane made all of these experiences possible.

    Making a Difference in Denver
    As part of Share Our Strength’s Cooking Matters program, I worked with various communities to teach

    • healthy cooking classes
    • basic nutrition
    • how to shop for healthy items on a budget

    Recipe Development for Denver Public Schools
    Next I interned at Denver Public Schools’ Farm Initiative, which converts unused school land into working farms producing farm-fresh food for school cafeterias.

    I developed kid-friendly recipes using ingredients harvested from their schoolyard farms. Every recipe had to meet Denver Public Schools’ strict nutritional guidelines.

    For Colorado Proud Day, I talked to students about the benefits of eating local. I also harvested produce at the Denver Green School.

    The work I will be doing at the nutrition research center at the Children’s Hospital will draw on the skills I learned at Tulane — specifically, nutrition-based research and protocols.
