Biography

With nearly three decades at Johnson & Wales University’s College of Food Innovation & Technology, Chef Russ Zito brings extensive experience in culinary arts, foodservice management, and sustainable food systems to his teaching. A JWU alumnus and U.S. Coast Guard veteran (1985–1994), he has also completed the university’s Teaching Assistant, Fellowship, and Management Development programs.
Chef Zito holds degrees in culinary arts, foodservice management, and managerial technology, and owns Z Culinary Services, a consultancy focused on foodservice concept and product development. He is deeply involved in JWU’s sustainability efforts, contributing to the care of campus chickens, the apiary, Wildcat Meadows raised bed gardens, and the CFIT hydroponic growing systems.
