Biography

Gill Stansfield is a prominent executive chef and culinary educator currently serving as the Assistant Dean of the College of Food Innovation & Technology (CFIT) at Johnson & Wales University (JWU) in Providence. With decades of experience in both commercial kitchens and higher education, he has been a foundational pillar of JWU’s world-renowned culinary program.

Stansfield has climbed the academic and administrative ranks at Johnson & Wales, dedicated to shaping the next generation of culinary leaders. Throughout his tenure, he has held numerous critical roles within the university, including associate professor in culinary arts, director of culinary purchasing and storeroom operations, department chair, and now assistant dean.

Stansfield is actively involved in promoting sustainable food systems and culinary excellence. He collaborates with regional initiatives like Eating with the Ecosystem, supporting local New England fishermen and teaching the culinary community how to utilize diverse, local wild seafood species. He works alongside professional culinary bodies, including the American Culinary Federation (ACF), Academie Culinaire De France and Chaine Des Rottiseur to maintain rigorous standards for professional chefs and culinary students alike.
