Culinary Facilities & Labs


No matter their major, College of Food Innovation & Technology (CFIT) students hone their technical skills in the college’s fully equipped kitchen laboratories.

Kitchens with a View

In Providence, CFIT programs are housed on our Harborside Campus, with stunning views of Narragansett Bay. (Harborside is 3 miles south of our Downcity Campus; Wildcat Wheels makes the trip multiple times a day.)

Labs are located in the Harborside Academic Center (HAC) and the Cuisinart Center for Culinary Excellence (CCCE), the country’s first LEED-certified culinary educational facility.

Cuisinart Center for Culinary Excellence (CCCE)

The central hub for CFIT students and faculty, the CCCE features 30 teaching labs, nine hot kitchens, bakeshops and pastry shops, dining rooms, meat-cutting and meat processing rooms, and an atrium where baking & pastry arts students sell baked goods every Thursday during the academic year.

CCCE Learning Labs  

  • International Baking & Pastry Institute: Features 16 advanced culinary laboratories, including spaces dedicated to chocolate, artisan baking and cake design.
  • Coors Brewing Laboratory: Where students learn brewing arts, recipe development, sensory evaluation and professional beverage management using small-scale brewing equipment to produce and bottle craft beers, sensory evaluation areas to test an analyze flavors, aromas and color profiles.
  • Wine & Spirits Tasting Lab: Fully equipped to conduct the Wine & Spirit Education Trust (WSET) classes, this space provides the equipment students need to study the relationship between climate, terrain, soils and the production processes that influence wine’s style and quality, while exploring the interactions between wine characteristics and flavor profiles.

Harborside Academic Center

The HAC is home to classrooms, chocolate/sugar labs, culinary labs, an amphitheater and the central campus dining hall. In addition, the Esports Center is now located on the first floor of the HAC.

Culinary Arts Museum

Containing more than 165,000 artifacts, this archive and exhibition space allows students to dive deep into the history of food and hospitality, while hosting events such as curated exhibits and tastings.

Labs & Centers

  • Food Innovation Design Lab (FIDL): The space for students to create market-ready foods from scratch, this lab mimics a professional food development and research center. It provides tools for researching and testing ingredients at commercial scale, analyzing pH, moisture content and baseline shelf-life, studying competitive products, testing flavors and textures and exploring supermarket placement, food packaging design and food safety regulations  
  • Ecolab Center for Culinary Science: Supports food entrepreneurs with innovation needs, including product development, process authority, nutritional labeling and lab analysis.
