On Thursday, November 12, Johnson & Wales University’s Charlotte Campus will host baking superstars for a panel discussion on the next big trends in baking and milling.

Glenn Roberts, founder of Anson Mills; Jennifer Lapidus, founder of Carolina Ground; and Lionel Vatinet, master baker and owner of La Farm Bakery, will weigh in on how the rediscovery of ancient grains is having a major impact on the industry.

Peter Reinhart, James Beard Award-winning author and JWU faculty member, will serve as moderator.

The panelists will discuss all aspects of this growing, nationwide trend that includes:

  • The discovery and recovery of heirloom strains of wheat, corn and other grains
  • How farmers, millers and bakers are working together to grow regionally specific
species of grains for use in this region
  • How others are replicating this effort in their own regions
  • The advantages, opportunities and challenges they face, as well the impact on flavor,
the environment, and the economy as this movement grows
