JWU Joins Jacques Pépin Foundation and Chefs' Collaborative for Sustainable Seafood Symposium

Providence, R.I. – May 23, 2018 – How sustainable is aquaculture? That's a question frequently asked along the East coast of the U.S. and beyond. It is the subject of the "Sustainable Seafood Symposium," organized by Johnson & Wales University (JWU), the Chefs' Collaborative, and the Jacques Pépin Foundation, to be held Wednesday, June 6, 2018, from 1 – 6 p.m. at the Harborside Campus.
The line-up of speakers includes national and regional authorities of the sustainable seafood movement and past James Beard nominees. Among them are:
- Rick Moonen, chef and noted sustainable seafood advocate
- Barton Seaver, chef and author of the recent "American Seafood: Heritage, Culture & Cookery From Sea to Shining Sea"
- Derek Wagner '99, JWU alum, Providence-based chef-owner, Nicks on Broadway, and co-chair, board of directors, Chefs' Collaborative
- Anna Malek Mercer, Ph.D., executive director, Commercial Fisheries Research Foundation
- Jeremy Sewall, noted Boston chef and author of "The New England Kitchen"
- Deborah Keane, "The Caviar Queen", founder and CEO of California Caviar Company
- Steve Malinowski, owner, Fishers Island Oysters
"There will be an energy at this symposium that will bring home the impact we all have upon our oceans," notes Chef Rollie Wesen, symposium organizer, JWU assistant professor, and executive director, Jacques Pépin Foundation. "Through TED-style presentations, we'll explore how the food choices we make as consumers and food professionals can positively change the way the world eats."
Seating is limited for the event, which is open to the public. A reception will follow featuring local oysters, a caviar tasting, and Fool Proof Brewing beverages. Must be 21 years of age to attend. Tickets are $75. Proceeds will benefit Chefs' Collaborative, now celebrating its 25th year of raising awareness about the challenges with seafood sustainability.
