Bio

Marleen Swanson, MS, RD has worked as a clinical dietitian both in the United States and in Saudi Arabia. In addition, she has cooked in restuarants in Paris, Corsica and in Boulder, Colorado. She also worked in Cuisinart’s test kitchen in Greenwich, Connecticut.

As department chair for the Dietetics & Applied Nutrition program, she is able share her knowledge and experiences with students and assist them in their professional paths in the food, culinary and dietetic world.

Her personal interests include sharing time with family and friends, as well as traveling to the most hidden corners of the world, from Yemen to Tibet to Madrid. She has traveled in over 50 countries, which has truly allowed her to explore cultures, lives and her love of cuisines from around the world.

Swanson received both her bachelor’s and master’s in food science and nutrition from Colorado State University. In addition, she attained a Master of International Management (MIM) from Thunderbird School of Global Management at Arizona State University (ASU). She has also earned Grand Diplômes in Cuisine and Pâtisserie from the prestigious Le Cordon Bleu in Paris.
